MEATLESS MANICOTTI 
12 manicotti shells
2 tbsp. butter
1 1/2 c. shredded Cheddar cheese
1 med. zucchini, sliced
1 1/2 c. cottage cheese
1 1/2 c. spaghetti sauce

Cook manicotti in 4 quarts boiling water about 10 minutes or until almost tender. Drain and rinse in cold water. In large skillet, cook zucchini and butter about 10 minutes, stirring occasionally. Stir in cottage cheese and 1 cup Cheddar cheese. Stuff manicotti with cheese mixture. Arrange in single layer in shallow 2 quart baking dish. Spoon sauce over manicotti. Cover with foil and bake at 375 degrees for 30 minutes. Uncover and sprinkle with remaining Cheddar cheese. Bake 10 to 15 minutes longer or until hot and bubbling. Serves 6.
