"CRAB" AND SPINACH CASSEROLE 
2 (10 oz.) pkgs. frozen chopped spinach
1/4 lb. grated sharp Cheddar
1 lb. frozen imitation crab
1 tbsp. chopped onion
1 tbsp. lemon juice

SAUCE:

1 tbsp. flour
2 tbsp. butter
1/2 can condensed tomato soup
1/2 pt. sour cream

Cook and drain spinach. Arrange in bottom of greased 1 1/2 quart casserole dish. Sprinkle with half the cheese, then the crab, then onion and lemon juice.

Sauce: Blend butter and flour in a saucepan over very low heat, thoroughly. Add soup and sour cream; cook slowly until well blended. Pour over casserole and sprinkle with remaining cheese.

Cook for 1/2 hour at 350 degrees or until cheese is melted and bubbly. Casserole freezes beautifully at this point for several weeks.

Serves 6.
