SWEET POTATO NUT TOP | |
3 cooked, mashed sweet potatoes 1/2 c. butter 1 c. sugar 1/2 c. milk 2 eggs 1 tsp. vanilla extract TOPPING: 1 c. firmly packed brown sugar 1/3 c. butter, softened 1/3 c. all-purpose flour 1 c. chopped pecans Combine mashed sweet potatoes, 1/2 cup butter, sugar, milk, eggs, and vanilla extract in a medium bowl; mix well. Pour into a lightly greased casserole. Sprinkle with topping. Combine brown sugar, 1/3 cup softened butter, flour, and pecans, mixing well. Sprinkle topping over potato casserole. Bake at 350 degrees for 30 minutes. Makes 6 servings. |
