FRIJOLES NEGROS (BLACK BEANS) 
1 (14 or 16 oz.) bag dry beans
1/3 c. olive oil
1 med. onion
5 pieces garlic cloves
1 tsp. ground cumin
Salt and pepper to taste

Soak beans overnight. Boil next day until soft or use pressure cooker. Saute onion and garlic in olive oil until onion looks transparent. Add cumin, salt and pepper. Add to soft beans. Boil for more than 30 minutes until beans thicken (medium heat). Serve over white rice or put everything in blender and through a colander and serve as a soup with toasted Italian bread or Cuban bread.
