BAKED SALMON CROQUETTES 
2/3 c. mayonnaise or salad dressing
1 1/2 tsp. Worcestershire sauce
1 tbsp. grated onion
1 tbsp. chopped parsley
1 tbsp. lemon juice
1/2 tsp. salt
Dash of pepper
2 c. cooked rice
1 (1 lb.) can salmon, drained, boned, flaked
Fine bread crumbs
Parsley sprigs (optional)

Combine mayonnaise, Worcestershire sauce, onion, chopped parsley, lemon juice, salt, pepper, rice and salmon. Chill. Shape into croquettes and roll in fine crumbs. Place in an ungreased baking dish. Bake in hot oven, 450 degrees for 15 to 20 minutes or until brown. Garnish each with a sprig of parsley, if desired. Makes 6 servings.
