POTATO CASSEROLE 
1 to 2 lb. bag frozen hash brown potatoes
1/2 c. chopped onion
1/2 c. melted butter
10 oz. grated Cheddar cheese
1 can cream of chicken soup
1 tsp. salt
1/2 tsp. black pepper
1 c. sour cream
Bread crumbs

Mix potatoes, onions, cheese, saute onion, half of the butter, cream of chicken soup, salt, pepper and sour cream. Sprinkle bread crumbs (or cracker crumbs) on top. Drizzle butter on top. Bake at 350 degrees for 1 1/2 hours.
