EGGPLANT ITALIAN STYLE 
1 med. eggplant
1/2 c. butter
Parmesan cheese
Bread crumbs
Salt
Spaghetti sauce, homemade or 1 lb. jar

Wash the eggplant, are and cut crosswise into 1/2" slices. Melt the butter and dip each slice of eggplant first in the butter and then the bread crumbs. Place on well greased baking sheet and sprinkle with salt and bake in hot oven, 450 degrees about 20 minutes or until lightly browned and tender. Remove from oven and put in Pyrex plate, layering the eggplant while covering each slice with spaghetti sauce and sprinkling each piece with Parmesan cheese. Bake at 350 degrees for about 10 minutes. Serves 4 as a vegetable. Make it ahead and just heat when dinner is almost ready.
