ZUCCHINI CASSEROLE 
6 c. diced zucchini
2 or 3 sm. chopped onions
1 c. mushrooms, sauteed
1 c. sour cream
1 tbsp. mayonnaise
1 egg, beaten
1 can cream of chicken soup
Salt and pepper to taste
1 box Stove-Top stuffing
1/2 c. melted butter
1 c. slivered cooked chicken
3/4 c. grated Cheddar

Cook zucchini and onion in water for 5 minutes, drain. Add the next six ingredients to the zucchini and onions. Mix the box of Stove-Top stuffing, melted butter and seasoning packet together. Put 1/2 of stuffing mix in oblong casserole dish; then the squash mixture. Spread the slivered chicken over the squash mixture. Sprinkle the remaining stuffing mix over top and cover with the Cheddar cheese. Bake at 350 degrees for 30-40 minutes.
