JOAN'S CHOCOLATE-BANANA CAKE | |
2 c. sugar 2 c. flour 1 c. water 1 stick butter 1/2 c. shortening 1 sm. pkg. chocolate chips 2 eggs 1/2 c. buttermilk 1 tsp. baking soda 2 mashed bananas 1 tsp. baking powder In mixing bowl, stir together 2 cups sugar and 2 cups flour. In saucepan, combine 1 cup water, 1 stick butter, 1/2 cup shortening and 1 small package chocolate chips and bring to a boil. Add to sugar and flour. Blend well and add 2 eggs, slightly beaten. Add 1/2 cup buttermilk to which 1 teaspoon baking soda has been dissolved. Add 2 mashed bananas and 1 teaspoon baking powder. Pour into greased and floured 2"x9"x12" pan. Bake at 375 degrees for 30 to 40 minutes. FROSTING: 1 stick butter 3 tbsp. cocoa 1/3 c. milk 1 box powdered sugar 1 c. pecans 1 tsp. vanilla While warm, frost with butter, cocoa and milk. Bring to a boil and remove from heat. Blend in powdered sugar, pecans and vanilla. For a delicious, moist chocolate cake, leave out the bananas. |
