MOSTACCIOLI 
1 to 1 1/2 lb. Italian sausage
1 med. onion, chopped
2 (6 oz.) cans tomato paste
12 oz. water (use tomato paste cans to measure)
1 green pepper, chopped
Salt and black pepper
Fresh garlic or garlic powder
Oregano

Cut sausage into bite size pieces (3/4 to 1 inch long pieces). In deep pan, brown sausage. After sausage has browned, remove from pan. Saute' onions and peppers in sausage drippings until tender. When onions and pepper are tender, add sausage back into the pan. Add tomato paste and water to pan. Stir until you have a smooth sauce (at this point you may need to add water or tomato sauce to make sauce thinner). Begin to add salt, pepper, garlic (start with 2 to 3 cloves) and oregano. Add spices to suit your taste. Cover and simmer for 45 minutes. Spoon over mostaccioli noodles and serve with warm Italian bread. This recipe will serve 4 persons. Serve with salad and Italian bread.
