FINNISH OVEN PANCAKE | |
4 eggs 2 or 3 tbsp. sugar 1/4 tsp. salt 2/3 c. flour Preheat oven to 425 degrees. Beat first 3 ingredients well; add flour and beat well. Melt one stick of butter in pan you are going to bake it in - 10-inch glass pie pan or 9x13 oblong. Add this melted butter to batter, leaving a bit in pan. Beat this into batter. Return pan to hot oven. Then add 2 cups of milk to batter; beat well. Open oven door and pull out oven rack and pour batter into hot pan, being careful after batter is in pan. Push gently back into oven and bake 25-30 minutes. Let stand awhile after taking out of oven to let steam out. Serve with jelly, jam, fresh berries or cinnamon and sugar. |
