KROPSUA-FINNISH OVEN PANCAKE 
4 eggs, well beaten
3 tbsp. sugar
1/2 tsp. salt
1/2 c. flour
2 1/4 c. milk
1/2 stick butter for pan

Gradually add sugar to well-beaten eggs; continue beating. Add flour alternately with milk, beating after each addition. Melt butter in large pan, slush butter on sides. Pour beaten mixture slowly into the pan. Bake in 350 degree oven for 1/2 hour.

Can be used as a dessert, warm or cold, served with ice cream and fruit.

Your proportions are correct, but my Finnish mother never added sugar to the batter. That's a no-no. Kropsua is best when baked in a pre-heated, buttered cast iron pan (I use a non-stick heavy oven-proof pan). Let the butter start to brown; then add the batter. Bake at 425 for 30 minutes. Serve with real maple syrup and more butter.

Have almost identical recipe! That came with my great grandmother from Finland... Always use sugar!! Also this bakes well in a cookie sheet! Thats the way grandma always made it! Not everyone could afford extra toppings!!!

I don't add sugar, but I do add small pieces of bacon on top and serve with more butter and maple syrup. Delish!
