BREAKFAST CASSEROLE 
9 to 12 slices bread (without crusts)
4 c. grated cheddar cheese
1 lb. sausage, browned and drained
1/2 c. chopped onion
2 c. mushrooms
6 eggs
1 pt. half and half
1 tsp. salt
1 tsp. dry mustard

Saute onion and mushrooms in butter. Spread bottom of 9 by 12 inch pan with spray oil. Lay slices of bread on bottom of pan to cover. Sprinkle cheese on top of bread and then cooked sausage over cheese. Spoon on onions and mushrooms. Beat eggs, half and half, salt and mustard together and pour over sausage and cheese. Cover and refrigerate overnight. Bake at 350 degrees for 30 to 40 minutes. Cool slightly and cut into squares.
