CHICKEN SCALLOPINI | |
4 chicken breasts, skin removed Black pepper Garlic Cayenne Basil 1 tbsp. olive oil SAUCE: 1 tbsp. butter 1 tbsp. flour 1/2 c. chicken broth 1/2 c. red cooking wine 1 tbsp. heavy cream or sour cream In skillet, heat 1 tablespoons olive oil. Season chicken breasts with pepper, garlic, cayenne (sparingly), basil (generously). Saute chicken on both sides to brown. Place browned chicken in round microwave-safe serving dish. SAUCE: In same skillet, melt 1 tablespoon butter; add 1 tablespoon flour and cook 30 seconds, stirring constantly. Add 1/2 cup chicken broth and 1/2 cup cooking wine slowly. Cook over medium-high heat, stirring constantly until thickened. Reduce heat; stir in 1 tablespoon cream. Spoon over chicken. Complete cooking at 350 degrees for 45 minutes in conventional oven (covered), or in microwave according to manufacturer's instructions. Great served with Basil Zucchini. |
