CHICKEN SCALLOPINI 
4 chicken breasts, skin removed
Black pepper
Garlic
Cayenne
Basil
1 tbsp. olive oil

SAUCE:

1 tbsp. butter
1 tbsp. flour
1/2 c. chicken broth
1/2 c. red cooking wine
1 tbsp. heavy cream or sour cream

In skillet, heat 1 tablespoons olive oil. Season chicken breasts with pepper, garlic, cayenne (sparingly), basil (generously). Saute chicken on both sides to brown. Place browned chicken in round microwave-safe serving dish.

SAUCE: In same skillet, melt 1 tablespoon butter; add 1 tablespoon flour and cook 30 seconds, stirring constantly. Add 1/2 cup chicken broth and 1/2 cup cooking wine slowly. Cook over medium-high heat, stirring constantly until thickened.

Reduce heat; stir in 1 tablespoon cream. Spoon over chicken. Complete cooking at 350 degrees for 45 minutes in conventional oven (covered), or in microwave according to manufacturer's instructions. Great served with Basil Zucchini.

Since microwave ovens vary in power, you may need to adjust your cooking time.
