PORK CHOPS AND APPLES 
4 center cut loin pork chops (1 1/2 inch thick), well trimmed
Freshly ground pepper to taste
1 tbsp. safflower oil
2 Golden Delicious apples, peeled, cored, and quartered
1/4 c. chopped onion
1 tbsp. brown sugar
2 tbsp. red wine vinegar
1 tomato, peeled and cubed
1/2 c. chicken broth

Sprinkle both sides of chops with pepper. In large skillet, heat oil. Cook chops 2 to 3 minutes or until browned on each side. Reduce heat. Continue cooking chops 15 minutes, turning occasionally. Arrange apples around meat. Cover and cook 5 minutes. Remove chops and apples to serving platter. Drain fat.

Cook onion in skillet until slightly limp. Stir in sugar and vinegar. Add tomato and broth. Cook mixture 2 minutes, stirring constantly. Pour hot sauce over chops and apples. Serve immediately.
