ORANGE PRALINE YAMS 
2 (2 lb. 8 oz.) cans yams, drained
2/3 c. orange juice
1 tbsp. grated orange rind
5 tbsp. brandy or flavoring
2 tsp. salt
Sprinkle of ground pepper
1 tsp. ground ginger
1/2 stick butter (4 tbsp.)
1/3 c. light brown sugar, packed
3 egg yolks

PRALINE TOPPING:

2/3 c. light brown sugar
1 c. chopped pecans
1 stick butter, melted
1 tsp. ground cinnamon

In large mixing bowl with electric mixer, beat yams until smooth. Mix in remaining casserole ingredients, beating until mixture is light and fluffy. Butter a shallow 2 quart casserole. Pour in yam mixture, smoothing top evenly. Make topping by mixing together. Spread evenly over yams. Can be refrigerated and covered overnight. Bake at 350 degrees for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. Great with ham or turkey.
