LAYERED GELATIN FRUIT SALAD 
1 env. (4 servings) low calorie lemon gelatin dessert mix
2 1/4 c. boiling water
2/3 c. plain yogurt
5 tbsp. diet mayonnaise or mayonnaise type salad dressing
2 c. diced green or yellow apples, unpeeled
1 c. halved green seedless grapes
1 env. (4 servings) low calorie orange gelatin dessert mix
1 c. ice cubes & water
Green seedless grapes for garnish

Dissolve the lemon gelatin in 1 1/4 cups of the boiling water. Allow to cool. Stir in the yogurt and salad dressing, then stir in the diced apples and halved grapes. Refrigerate until slightly thickened.

Meanwhile, dissolve the orange gelatin in the remaining cup of boiling water. Stir in the 1 cup ice cubes and water until melted, then refrigerate for 10 to 15 minutes, until slightly thickened. Pour half the orange gelatin mixture into a 6-cup mold. Spoon the chilled lemon fruit mixture over it and top with the remaining orange gelatin. Chill for several hours or all day, then unmold and garnish with grapes, if desired. (The salad can also be prepared in a pan and cut into squares for serving.) 12 servings.
