KEITH'S FAVORITE CREAM CHEESE
PIE
 
CRUST:

1 1/2 c. graham cracker crumbs
2 tbsp. sugar
1/3 c. melted butter

FILLING:

12 oz. Philadelphia cream cheese
3/4 c. sugar
2 eggs, well beaten
1 tsp. vanilla

TOPPING:

1/2 pt. sour cream
3 tbsp. sugar
1 tsp. vanilla

Crust: Mix all ingredients well and press well on bottom and sides of a 9 inch pie plate. Bake at 350 degrees for 10 minutes.

Filling: Mix cream cheese and sugar until smooth. Add eggs and vanilla. Pour into crust and bake at 350 degrees for 20 minutes. Cool 10 minutes at room temperature before adding topping.

Topping: Mix all ingredients well before pouring on pie. Bake whole pie for 10 minutes at 350 degrees. Remove from oven and cool at room temperature for a half hour before refrigerating. It must be chilled at least 3 hours before serving but is better if served the next day.
