IRISH SODA BREAD | |
4 c. flour 3/4 tsp. salt 3 tsp. baking powder 1 tsp. baking soda 1/4 c. sugar 2 c. raisins 1/4 c. butter 1 egg 1 3/4 c. buttermilk In large bowl combine flour, salt, baking powder, baking soda, sugar. Add butter and cut with pastry blender until crumbly. Add raisins and toss. Beat eggs slightly and mix with buttermilk. Add to dry ingredients and stir until blended. Turn onto floured board and knead until smooth (2 or 3 minutes). Divide dough in half and shape into round loaf. Place into greased 8 inch pie or cake pan. Press down until dough fills pan. With sharp knife cut a cross in the middle of each loaf, about 1/2 inch deep. Bake at 375 degrees for 35 to 40 minutes or until brown on top. |
