APPLE HAPPY CAKE 
2 c. diced, raw apples
1 c. sugar
1 egg, beaten
1/4 c. salad oil
1 c. unsifted flour
1 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
1/2 c. chopped nuts

Mix apples and sugar and let stand 1/2 hour. Add the rest of the ingredients. Bake in a 8 inch square pan at 350 degrees for 40-50 minutes. Serve with ice cream or whipped topping.
