EAT MY CARROT CAKE, BE HAPPY 
1 1/2 c. salad oil
2 c. sugar
4 eggs
2 c. plain flour
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
1 can crushed pineapple, drained
3 c. shredded carrots
1 c. angel flake coconut
1 c. nuts
1 tsp. vanilla

Cream together oil, sugar, and eggs. Add flour, salt, cinnamon, and baking powder. Add pineapple, carrots, coconut, nuts, and vanilla. Add soda last. Bake in oblong pan.
