ZUCCHINI CASSEROLE 
3 c. zucchini, sliced
2 c. grated carrots
1 can cream of chicken soup diluted with about 1/4 cup milk
Chopped onions or croutons, as desired

Alternate layers of zucchini, carrots, chopped onions and soup with croutons. Cover until last few minutes. Bake at 350 degrees for approximately 30 minutes. Serves 4 to 6 people.
