BEAN CHOWDER 
2 cans speckled butter beans
2 tbsp. butter
1/2 tsp. salt
1/4 tsp. pepper
2 beef bouillon cubes
1 can Ro-Tel tomatoes with chilies
1 med. onion, chopped

Saute onions in 1 tablespoon butter. Mix all other ingredients in large pot. Cook until boiling. Lower heat and put lid on and simmer for about 25 minutes.
