CHOCOLATE ECLAIR CAKE 
2 sm. boxes instant vanilla pudding
3 1/2 c. cold milk
1 (9 oz.) Cool Whip
1 box graham crackers
1 (8 oz.) cream cheese, optional
Chocolate Frosting (recipe follows)

Butter the bottom of a 13 x 9 inch pan. Line bottom of pan with whole graham crackers. Mix pudding and milk; beat 2 minutes. Add cream cheese if used. Add Cool Whip and blend together. Top the graham crackers with mix and continue with layers until pudding mix is gone. Remember to begin and end with crackers. Top with Chocolate Frosting.

CHOCOLATE FROSTING:

2 pkg. melted chocolate
2 tsp. white corn syrup
2 tsp. vanilla
3 tbsp. soft butter
1 1/2 c. powdered sugar
3 tbsp. milk

Mix all ingredients together and beat until smooth. Spread over top layer of graham crackers.
