CHICKEN OREGANO 
1 (2 1/2 - 3 lb.) chicken, quartered
1 tsp. salt
1/8 tsp. black pepper
1/3 c. olive oil or salad oil
4 tbsp. lemon juice
1 clove garlic, minced
1 tsp. finely chopped parsley
2 tsp. dried oregano

Place chicken skin side up, on broiler pan. Sprinkle with half the salt and pepper. Combine remaining ingredients; blend well. Brush on chicken. Broil under medium heat, about 3 inches from heat, basting frequently (about 10-12 minutes). Turn chicken; sprinkle with salt and pepper. Baste well. Continue to cook, basting frequently, until chicken is done.
