CHOCOLATE MINT CHEESECAKE 
2 c. chocolate wafer crumbs
1/4 c. sugar
1/4 c. melted butter
4 (8 oz.) Philly cream cheese
1 (3 oz.) Philly cream cheese
1 2/3 c. sugar
5 eggs
1/3 c. creme de menthe
1 tbsp. vanilla

Combine first 3 ingredients; firmly press mixture evenly over bottom and 2 inches up sides of a 10 inch spring form pan. Bake at 325 degrees for 7 minutes. Cool.

Beat cream cheese at high speed until light and fluffy; gradually add 1 2/3 cups sugar, beating well. Add eggs, beating until combined. Stir in creme de menthe and vanilla. Pour into prepared pan. Bake at 325 degrees for 1 hour and 15 minutes. Center will be soft. Cool to room temperature. Remove from pan.
