MILKLESS - EGGLESS DOUGHNUTS 
Shortening or oil for frying
1 c. water
1/4 c. oil
1/2 c. brown sugar
6 oz. soft tofu
3 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
Confectioner's sugar

Begin heating shortening to 375 degrees in deep, heavy saucepan to reach 2 inch depth. As it heats, combine water, oil, brown sugar and tofu. Add dry ingredients all at once. Blend. Roll or pat dough to 1/2 inch thickness, adding extra flour if needed to prevent sticking. Cut doughnuts out. Drop carefully into fat, turning until golden. Drain on paper towels. If desired, toss hot doughnuts in confectioner's sugar.
