MEXICAN CORNBREAD 
1 1/2 c. meal
1 c. buttermilk
1/2 tsp. baking soda
2 eggs
1 sm. can cream corn
1/2 c. onion, chopped
1/2 c. Jalapenos, chopped (seeds & pepper)
1 lb. hot sausage
1/2 c. cheddar cheese to top (if desired)

Mix everything together. Bake at 400 degrees until done. I use muffin pans. You get more crust this way. They also store easier this way.
