MEXICAN CORNBREAD 
1 1/2 c. self-rising meal
1 med. onion, diced
1/2 c. grated cheese
1 sm. can whole kernel corn
3/4 tsp. hot pepper, crushed
2 eggs
1/2 c. oil
1 1/4 c. milk
2 tbsp. sugar

Mix together and pour in greased hot skillet; cook in oven at 400 degrees until good and brown.
