MICROWAVE TACO SALAD | |
1 lb. hamburger 1 med. onion, chopped 1 (15 oz.) can kidney beans, drained 1/2 c. water 1/2 to 1 pkg. taco seasoning 1/2 head lettuce, torn into bite-size pieces 2 med. tomatoes, cut in chunks 1/2 green pepper, chopped 1/2 c. shredded Cheddar cheese 1/2 c. shredded Monterey Jack cheese 1 c. broken corn chips Sour cream (optional) Chili or taco sauce Brown meat and onions on high for 4 1/2 to 6 1/2 minutes. Stir, then drain. Add beans, water and taco seasoning. Cook, uncovered, 10 to 13 minutes on medium power (50%) or until thick and bubbly, stirring once. Combine lettuce, tomatoes, and pepper in a salad bowl. Spoon meat mixture over vegetables in bowl. Top with cheeses and chips. Serve immediately with sauce. Top with sour cream. |
