STUFFED ARTICHOKES 
4 lg. artichokes
1/2 lb. lean ground beef
3 slices hardened Italian bread, soaked in water
2 eggs, beaten
1/2 c. partially cooked rice
1 tbsp. olive oil
1 tbsp. chopped parsley
1 tsp. oregano
Salt and pepper to taste

1 large can of tuna may be substituted for a meatless option.

Cut off pointed tips and stems of artichokes and open centers. Brown the beef. Combine all ingredients (except oil) and stuff the artichokes. Stand artichokes in a pot and fill with water to top of artichokes. Sprinkle tops with olive oil. Bring water to a boil. Reduce heat and simmer until leaves are tender; approximately 40 minutes. Cool slightly. Can be served with drawn butter or as is.

This dish is often served with the traditional Italian "Fish Dinner" on Christmas Eve.
