SIMPLE CHEESECAKE 
Crust:

1/3 c. butter
1/4 c. sugar
1 1/4 c. graham cracker crumbs

Cheese Cake:

3 eggs
1 c. sugar
1 tsp. vanilla
1 lb. cream cheese

Topping:

Fresh fruit of choice or a lemon glaze

Crust-- Combine ingredients and line spring form pan with crust.

Cheese cake-- Cream sugar and eggs, add cream cheese and vanilla; beat well until fluffy. Put into pie crust and bake at 350°F for 25 minutes; cool.

Topping-- Place fruit on top or cover with glaze.
