SUMMER FRUIT TRIFLE | |
2 lg. ripe peaches, cut into bite size pieces 1 c. blueberries 1 c. raspberries 2 tbsp. sugar (optional) 1 navel orange 24 vanilla wafer cookies 1 container (16 oz.) Dannon Lowfat Vanilla Yogurt 1. In a 6 cup bowl, combine the peaches, berries and sugar. 2. Grate the orange peel and squeeze the orange to extract the juice. Stir peel and juice into the fruit mixture. 3. In a 6 cup bowl, make a layer of half the vanilla wafers. Cover with half of the fruit and about two-thirds of the yogurt. 4. Make a second layer of wafers and fruit reserving a few berries for garnish. Spoon the remaining yogurt into the center. Garnish with reserved berries. Refrigerate at least one hour. Serves 4- 6. |
