Approximately 280 calories per bowl. 2 tbsp. vegetable oil 1 c. chopped onion 1 (19 oz.) can white kidney beans (cannellini) 1 (15 1/4 oz.) can red kidney beans 1 (14 1/2 oz.) can tomatoes, broken up 3 1/2 c. chicken broth (two 13 3/4 oz. cans) 1/3 c. uncooked long-grain rice (white) 8 oz. Swiss Chard, chopped (4 packed cups) OR 1 (10 oz.) pkgs. frozen chopped kale Heat oil in large heavy saucepan over medium heat. Add onion; cook about 5 minutes until tender. Stir in beans, tomatoes, broth and rice. Bring to a boil. Reduce heat; cover and simmer 20 minutes. Stir in Swiss Chard. Cover and simmer 2 minutes longer or until chard wilts. 10 cups. |
