SMOKED SAUSAGE AND BEAN SOUP 
16 oz. smoked sausage
2 cans red kidney beans
2 c. diced potatoes
2 c. shredded cabbage
1/4 c. tomato paste
1 medium onion, chopped
6 c. water
2 tsp. butter
3 tbsp. vinegar
1 to 2 beef bouillon cubes
1 can Ro-Tel (optional)

Sauté onion in butter in large pot. Add water, potatoes, sausage, beans and bouillon. Cook for 15 minutes in covered pot (until potatoes are cooked). Add cabbage, tomato paste (Ro-Tel) and vinegar and cook for 10 more minutes.
