BUTTERMILK BISCUITS 
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
3/4 c. buttermilk or 3/4 c. sweet milk with 1 tbsp. vinegar mixed in
1/2 tsp. salt
1 tsp. sugar
5 tbsp. butter or lard

Sift together flour, salt, baking powder, sugar, baking soda. Cut in butter (lard). Add buttermilk and lightly mix (25 strokes only). Turn dough onto floured board and knead gently for 1/2 minute. Pat the dough to a thickness of 1/4 inch or more. Cut with biscuit cutter. Bake on ungreased cookie sheet 10-12 minutes.

It is best to use 2 cookie sheets, one on top of the other, to prevent over browning of biscuit bottoms. So yummy!
