CHICKEN BAKED WITH POTATO FLAKES 
4 or 5 chicken breasts
1 c. potato flakes (boxed)
1 to 2 eggs
butter
Dash of salt and pepper

Clean and skin chicken pieces and pat dry. Dip in slightly beaten egg (with salt and pepper) and 2 tablespoons water. Roll in dry potato flakes.

Put butter to melt in the bottom of baking dish (enough to cover bottom).

Place chicken in glass baking dish. Bake at 375 degrees F. for 30 minutes; turn and bake about 30 minutes more.
