LESLIE'S DEEP APPLE DISH 
1 1/2 c. sugar
1/2 c. all-purpose flour
1 tsp. nutmeg
1 tsp. cinnamon
1/4 tsp. salt
15 c. thinly sliced, pared apples (about 10 med., 30 makes 2 pies)
2 tbsp. butter
Pastry mix for 9 inch one crust pie (or two crust)

Preheat oven to 425 degrees.

Stir together sugar, flour, nutmeg, cinnamon and salt. Mix with apples. Turn into ungreased pie pan or square 9x9x2 pan and dot with butter. What I do is melt the butter and toss apples to coat.

Prepare pastry as directed except roll into 10 inch square (for 9x9 pan). Fold pastry in half and cut vent slits near center. Unfold over apples in pan. Fold edges under just inside edge of pan.

Bake 1 hour or until juice begins to bubble through slits in crust. Best severed warm or any way you like to eat apple pie.
