APPLE AND SAUSAGE SUPPER 
2 med. cooking apples, cut into 8 wedges each
2 tbsp. butter
1 med. green pepper, cut into thin strips
2 tbsp. scallions or onions, diced
8 link sausages, cut in chunks (about 1 lb.)
3 tbsp. brown sugar
2 tbsp. cornstarch or flour
1/2 tsp. salt & dash of pepper
1 c. water
1/2 c. apple juice
2 tbsp. soy sauce
1 tbsp. vinegar
Hot cooked rice

Saute apple in 2 tablespoons butter in skillet until tender; remove from skillet. Saute green pepper and scallions (or onions) in butter remaining in skillet until tender. Remove from skillet, saute sausages in skillet until browned; pour off drippings. Combine brown sugar, cornstarch (or flour), 1/2 teaspoon salt and the pepper. Add 1 cup water, the apple juice, soy sauce and vinegar; mix well and pour over sausages. Cook and stir over medium heat until sauce is thickened and clear. Cover and simmer 10 minutes. Add apple, green pepper and scallions (or onions), and heat thoroughly. Serve over rice. Makes 4 cups sausage mixture or 4 servings.
