BAR - B - QUED BRISKET | |
5 or 6 lbs. of brisket of beef 1 tbsp. liquid smoke 1 tsp. celery salt 1 tsp. onion salt 1 tsp. garlic salt 2 tsp. salt 1/2 tsp. pepper 2 tbsp. Worcestershire sauce 1 (6 oz.) bottle B-B-Q sauce Sprinkle each side of thawed meat with 1/2 of liquid smoke, 1/2 of celery salt, 1/2 of onion salt and 1/2 of garlic salt. Wrap in foil and marinate overnight. The next morning unwrap meat, sprinkle each side with 1/2 salt and 1/2 Worcestershire sauce. Rewrap in foil and bake at 275 degrees for 5 hours. Cool meat completely in refrigerator. Take off fat. Slice meat about 1/4-inch thick. Pour B-B-Q sauce over meat. Bake another hour. Meat may be left without B-B-Q sauce. Thicken broth and pour over plain brisket. |
