BAKED STUFFED SCALLOPS 
2 lbs. bay or Calico scallops
1 stick butter
1 med. onion, chopped finely
1 tsp. fresh garlic, finely chopped
1/2 tsp. parsley, finely chopped
1/2 c. cooking sherry
1 tsp. crushed red pepper
Plain bread crumbs
Shake of black pepper

In a skillet, melt butter. Add onions and chopped garlic, simmer until onions appear clear. Next, add pepper, parsley and simmer for a few more minutes. Add sherry and simmer an additional 10-15 minutes. Place scallops in a square baking dish. Pour onion mixture evenly over scallops, if it doesn't cover add more melted butter. Cover top generously with bread crumbs and bake uncovered at 400 degrees for 30 minutes or until top is lightly browned.
