BLACKBERRY JAM CAKE | |
1 1/2 c. sugar 2 sticks butter 4 eggs 3 c. plain flour 1 c. buttermilk with 1 tsp. of soda dissolved in it 2 tsp. cinnamon 1 tsp. ground cloves 1 tsp. vanilla flavoring 1 c. blackberry jam Cream butter and sugar together and add eggs, one at a time. In a separate bowl, mix the dry ingredients. Add soda and buttermilk mixture to dry ingredients. Now add the butter, sugar and egg mixture to the dry ingredients. After mixing together, add vanilla flavoring and jam. Bake in a greased and floured tube pan for 1 hour and 15 minutes at 350 degrees or until cake tests done. ICING: 2 1/2 c. sugar 2 sticks butter 1/2 c. milk Put in medium size saucepan and cook over medium heat until it reaches a boil. Boil until it reaches soft ball stage. Take off heat and beat until cool and starts creaming (changing color and begins to have a yellowish-white look). As soon as it begins to cream, spread immediately on cake. |
