BANANA SPONGE 
9 eggs
1 1/4 c. sugar
3/4 c. cake meal
1/4 c. potato starch (scant)
Pinch of salt
1/3 c. finely chopped nuts (opt.)
1 lg. banana, mashed

Beat yolks with sugar until lemon color (light). Sift cake meal and starch. Blend flour and banana and nuts into yolk mixture. Beat whites stiff and fold in last. Bake at 350 degrees for 55 minutes in a high tube pan.
