SQUASH SOUFFLE 
3 lbs. butternut squash (approximately)
1 stick butter
1/2 c. sugar
1/2 c. flour
3 eggs
1 pt. Coffee Rich
Pinch of salt

Cook and mash squash. Add remaining ingredients. Beat well with mixer. Pour into buttered 2 or 3 quart casserole dish. Bake at 350 degrees for 1 hour 10 minutes (until center is set).
