MEXICAN LASAGNA | |
1 1/2 lbs. ground beef 1 lg. onion 16 oz. tomato sauce 10 oz. enchilada sauce 1 pkg. taco seasoning 1 tsp. salt 1/8 tsp. pepper 1/4 tsp. garlic powder 1-2 c. sm. cottage cheese 1 egg 1/2 lb. grated Monterey jack cheese 8 soft tortillas, lg. 1/2 - 1 c. cheddar cheese 1/2 c. crushed taco chips Brown beef and onion and drain. Add the next 6 ingredients. Lightly grease a 9"x13" pan. Layer 2 tortillas, the beef mixture, the cottage cheese and egg mixture and the 2 cheeses. Repeat. Top with crushed chips. Bake at 350 degrees for 35 to 45 minutes. Set 15 minutes. |
