COCONUT QUEENS PUDDING 
2 env. unflavored gelatin
1/2 c. cold water
1/3 c. boiling water
6 egg whites
3/4 c. sugar
1/4 tsp. salt
1 pt. heavy cream
1 tsp. vanilla
1 c. flaked coconut
Strawberries

Soften gelatin in cold water, add boiling water, stir to dissolve. Beat egg whites to soft peaks. Gradually beat in sugar and salt. Fold gelatin into whites. Whip cream until stiff, add vanilla. Fold cream, whipped into whites. Sprinkle half of coconut into GREASED 8 inch spring pan. Pour cream mixture in and sprinkle remaining coconut on top. Chill 4 hours or overnight. Garnish with cut berries.
