GARDEN VEGGIE BAKE 
4 med. zucchini
4 med. tomatoes
1 lg. green pepper
1 lg. onion
3 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 c. grated Mozzarella cheese
1/4 c. melted butter
1/2 c. Parmesan cheese

Slice all vegetables, zucchini thick (1/4 to 1/2 inch) and all others thin. Mix together flour, salt and pepper. Layer half of vegetables in order above, sprinkle with half of flour mixture, half of Mozzarella over flour. Repeat vegetables, flour, Mozzarella over Mozzarella. Pour 1/4 cup butter, and sprinkle 1/2 cup Parmesan cheese. Bake covered 40 minutes, uncovered 10 minutes. Can cut into squares. Use large baking dish or 9x13 inch pan.
