4 c. sugar 5 c. vinegar 1 tbsp. ginger, black pepper and cloves 3 tbsp. salt 30 lg. tomatoes (or a lug of medium to large) 3 lg. green peppers, large onions, large sweet red peppers 2 sm. red hot peppers if desired (I omit these but add a couple of shakes of ground red pepper) Immerse tomatoes in boiling water to peel. Core and chop tomatoes and remainder of ingredients, mix and cook gently until thick (several hours). This tends to burn on the bottom of the kettle very easily, BEWARE. I smelled this cooking at my neighbors and after tasting it promptly made my own. It's wonderful with all varieties of meats, excellent on all types of beans, especially good on cottage cheese and by the spoonful. |
