BLACK BOTTOM CUPCAKES 
2 (8 oz.) pkg. cream cheese, room temperature
2 eggs
2/3 c. sugar
1/4 tsp. salt
2 c. chocolate chips
3 c. flour
2 c. sugar
1/2 c. unsweetened cocoa
2 tsp. baking soda
1 tsp. salt
2 c. water
2/3 c. vegetable oil
2 tbsp. white vinegar
2 tsp. vanilla

With a wooden spoon combine cream cheese, eggs, 2/3 cup sugar, and salt. Carefully add in the chocolate chips and set aside.

Combine flour, sugar, cocoa, baking soda, the 1 teaspoon salt, and mix well. Add water, oil, vinegar, and vanilla. Blend well.

Fill 36 cupcake papers about 3/4 full of batter. Drop 1 heaping tablespoon cream cheese mixture into center of each.

Bake at 375 degrees for 35-40 minutes. Yields 3 dozen cupcakes.
