CHICKEN DIJON 
3 to 6 chicken breasts, skinless
2 tbsp. lemon juice
Salt & pepper
1/2 c. plain nonfat yogurt
1/4 c. light mayonnaise (optional), may use a total of 3/4 c. nonfat yogurt instead
1 tbsp. each Worcestershire sauce & Dijon mustard
1/2 tsp. ground thyme
1/4 c. cayenne pepper
1/4 c. green onions, thinly sliced
1/4 to 1/2 c. grated Parmesan cheese

Put chicken in baking dish and drizzle with lemon juice. Sprinkle with a little salt (optional) and pepper. In a small bowl, mix yogurt, mayonnaise, mustard, Worcestershire, thyme, cayenne and onions. Spread evenly over chicken. Bake uncovered for about 20 to 22 minutes at 350 degrees. Sprinkle with Parmesan and broil about 3 minutes until lightly browned. Serves 3 to 6. Great with brown rice and vegetables.
